The fascinating story of Los Poblanos started around 1930s to the 1940s when it was nothing more than a model experimental farm. Nowadays, set among 25 acres of lavender fields, enormous cottonwood trees and lush formal gardens, the property comprises 45 guest rooms, a field-to-fork restaurant, a working organic farm and a retail and production space. Designed by John Gaw Meem, the rooms follow the classic New Mexican style. Warm and cosy, they impress by their distinguished simplicity with a touch of modernism. The Farm Suites feature rustic wood burning fireplaces, hardwood floors, original artwork and incredible views of the gardens.
Given their continuous preoccupation with organic farming, food at Los Poblanos cannot be anything but exquisite. Campo is a casual fine-dining experience based exclusively on seasonal organic ingredients harvested locally. The bar menu features small-batch barrel-aged spirits and house-made components including lavender syrup, bitters and amaros.
Having planted its first lavender in 1999, almost two decades ago, Los Poblanos have learned to make the best of this blessed plant.
